here's a sneak peek of a video I shot last night! it's a cuban pork flatbread pizza with onions, banana peppers and a lime mayo. I baked the flatbread on a cedar plank and it turn out AMAZING!

I also made seared scallops over roquette (arugula) with a jalapeno vinaigrette dressing! this turned out so good! Im into making vinaigrette's that go with my meal. I also made a pecan watermelon salad with a watermelon vinaigrette. that was awesome as well!

I have another ham to boil, roast and burn.

I have been making turkey burgers for the BBQ. How much better were they than the bought rubbish!

nice to see you coming round again Miss H :) Im not big into ham. I like it but not quite enough to do it at home. Not sure why because it's pork and I fucking LOVE anything that comes from a pig!

I was driving today and saw a sign for "Pick your own Blueberries" and had a great idea! So I picked some and brought them home to make this amazing and simple dessert!
It was so simple and truly amazing!
What You'll Need:
1 1/2 cup fresh blueberries
3 large egg whites
1/4 teaspoon creme of tarter
zest of 1 lemon
2 tablespoons sweetened condensed milk
1 tablesoon of butter

One of the best things I have EVER made!!

I only buy prime beef so the only thing I seasson with is kosher salt and pepper. I sear it in a cast iron skillet then finish in the convection oven at 550 degrees until medium rare.

I work in Celsius & Kelvin scales. 550 degrees and I'd have a lump of coal instead of beef left in the oven at that temp. Cannot get my head around fahrenheit at all, it's an alien language to me.

I have a hard time on rainy days. It gets me down and I feel so blah! I was supposed to spend my day out on my boat with some friends but Florida being Florida, it rained all day! So I decided to make some comfort food to cheer me up and what better than homemade potato chips!
What You'll Need:
2 Thinly sliced potatoes
1/2 cup crumbled bleu cheese
1 cup mayonaise
1 cup sour cream
chopped green onion

This cheered me right up!!

I love making new and interesting cocktails and this one came out amazing! I squeezed the juice out of some nice big lemons and then used the zest from one of them, tossed the skins into the pitcher, chopped up a couple of vanilla beans and then filled it up with ice cold vodka!
What You'll Need:
Lemons
2 Vanilla Beans
Zest from 1 Lemon
Vodka

and of course some ice and a pitcher!!

Étouffée sounds pretty fucking good on a day like this! like chili or red beans n rice. a gf of mine is coming over tonight and Im making some crab cake sliders with an angel food cake & fruit dessert that Ive been tinkering with. pics to come :)

Nice to see you filming from the new place. That dip is going into my file for BBQ invites. What kind of oil did you use for the chips?

Ham is a project for me yet well worth it. I'll strip those fuckers down to get everything I can from them. The butt can make tons for sandwiches for a 1 or 2 person household after a dinner. God bless the spiral cut ham. The shank being less sandwich friendly has it's benefits also. More tender and the chunks you can get off after slicing are great for a ham pasta salad. That fat from the shank I'll cut off and render down into a serious frying use.

Either one will have that bone in my crock. The butt gets dried black beans with tons of garlic and the shank gets dried peas. Cook that shit down low and slow and you've got it all. Put those black beans over rice. The pea soup with the ham that cooks off the bone are both restaurant quality. Yea, it's a project. But like they say about clams, you get the clams and the clam juice.

Did that storm that just rolled through your area affect you? Hope all is fine.

yeah we had some heavy winds and rain but we needed the rain so badly. the bimini on my boat has to be replaced frame and all which is a big pain but not so bad in the big picture of things. I just hate the rain because then the dogs dont wanna go out and when they do they come in wet and muddy :( I have a pile of towels to wash from drying and wiping dog feet all day lol

I use canola oil to fry anything. high smoke point which I like. I'd also add a little more bleu cheese. I think it needed a little more but otherwise it turned out really good.

check this out that I made last night. the picture doesn't do it justice! I took an angel food cake and cut into small pieces and lined the bottom of the dish. then topped it with homemade whipped cream, then a layer of raspberries, then more whipped cream, then blackberries, then more angel food cake then drizzled some melted semi-sweet chocolate with cream over the top of that, then another layer of whipped cream and topped it with blueberries!

HOLY FUCK WAS IT GOOD!

Sometimes you just have to own up to the fact that the French are far far superior to the rest of the world with certain foods. Anything involving butter or cream is one of those times. I have traveled all over France and one of the many things that sticks in my memory are the mashed truffle potatoes I had in Dijon, France. I cannot begin to tell you how amazing they were. I had never had anything like it before, so I have made it my mission to try and come close to making them in the same manner. I have actually gotten pretty close and I'll keep trying! You HAVE to try this. This might change your attitude towards french food all by itself!
What You'll Need:
4 boiled & peeled potatoes
1 cup heavy cream
1 cup milk
3 garlic cloves
2 Bay leaves
1 table spoon black truffle oil
1/2 cup of unsalted sweet cream butter
Sea Salt
Pepper
Please, you HAVE to make these!!

Heavy cream is the same as our double cream, and a cup is 8 fl oz or about 250ml.
 
Cheers, I know measurements, but thanks for the info on the cream. All this talk of cream on a porn stars thread.................you couldn't write the script :)
