Suckling pig I had once at a Christmas Eve party at a friend's house. It kind of weirded me out at first but once our host started throwing it onto the plates Porky lost all of his charm and became food. Ribs, ham, bacon, dig in.

I come from a small town in Ulster County NY. A number of Puerto Ricans built Villas that were bars with some overnight rooms and restaurants. It became a summer destination for Puerto Ricans from NYC. They also booked Latin bands. Big names playing these small places all weekend. Hundreds of chartered busses rolling into this dinky little rural town every weekend. Several had their spits roasting full sized pigs in view of the main road. Not just 1 pig, some had 3 going.

here's a great one........

There are few things better than a great steak, and filet mignon is one of the most precious cuts of meats that there is. Very little fat but so soft and tender and so great to add sauces to. So in this one I mixed up the juice from 2 limes and a lemon in a bowl and added some chopped basil and some lemon pepper. I seared my filet mignon until it was barely medium rare and a nice crust on my meat. I sliced it nice n thin and then I tossed it in my bowl of basil and juice until all pieces were evenly covered. I plated the meat and served it with 2 baked red potatoes topped with some olive oil and fleur de sel and cracked pepper. AMAZING!
What you'll need:
Filet Mignon (beef tenderloin)
olive oil
basil chopped
juice of 2 limes
juice of 1 lemon
fleur de sel
2 red potatoes
cracked lemon pepper

No we aren't. Go to her site and catch up on the dozens of dishes already there. I go there picking up techniques to use for other dishes. There's lots of substitutions that can be used.

Wednesday as the middle of the week is known as "Hump Day"

That steak looks good.
I would use a hotter pan for less time - I like my steak rare but with the caramelised burn to it. I have a heavy based pan that I leave on the highest heat for 15-20 minutes before putting my steak in. Lightly oil the steak (not the pan) with some cooking olive oil (NOT Virgin) and season with sea salt and fresh ground black pepper. 30 seconds a side, and open the windows as it can get a little smoky.

i love that black and white pictures on wall. great. i'm getting a new flat this week and am taking some ideas about styling it. loved the big TV, great for a sony playstation to play with friends pro evolution soccer, lol. can't say much more than just love it.
i did mention taratour, it's a type of salad, it's made with yogurt, you put some yogurt on a dish, and add in it cucumber and garlic. simple and tasty, salt by wish.
have a good time miss mariah.
