Thought I'd share some pics from my shopping trip on Saturday when I was buying for my dinner party I threw Sunday for my friend's 25th sobriety anniversary. Double bone lamb chops, 22 ounce tomahawk rib eyes and a couple of extra heavy cut NY strips which were around 20 ounces each. I sat them for 90 minutes with just sea salt and pepper, then added my coffee rub (cumin, coffee, cayenne, white and black cracked pepper, garlic powder, dry mustard, onion powder and paprika) and let them sit another 45 minutes at room temperature. Once they were ready I seared them all in a REALLY HOT cast iron for 1 minute each side and put them under the broiler on a rack.
Along with the steaks I made green beans almondine (green beans, lemon juice and slivered almonds) mashed red potatoes with black truffle oil and homemade Cesar salad with white anchovie fillets. Of course I made about 2 pounds of bacon for the drippings which I sat aside with slices of onion and garlic cloves to infuse into the bacon drippings. One the steaks were ready after resting for 10 minutes out of the broiler I spooned some of the onion and garlic infused bacon drippings over the top of each.
It was decadent to say the least.
