Back home again but fell in love while I was away...with yellow tail snapper. Sounds like some asian sex shit but for real...I have had it before and its always good. Smaller fish but tasty and having it fried whole with the thai chili sauce and toasted coconut is now quite possibly my favorite combination. Pulling forkful of the white flaky meat off the fish in big chunks with the crispy skin was awesome. I have a great fish market by my house and I'm gonna get a mangrove snapper and try it this weekend.

This is where I stayed in Islamorada Awesome place! Grilled fresh fish every night but 1 and ate 3 feet from the water.

I noticed that the cottage you featured has a fireplace. I bet that gets used a lot in the Florida Keys lol
 
Here's a sneak peek at a video I just shot on Monday at a place called "Ducky's" in Tampa. One of the owners is Evan Longoria They have duckpin bowling and really good food and seriously hot waitresses. I was there filming on a Monday afternoon so the talent wasn't their a list but if you go on a Friday evening or Saturday its all 10s. Seriously, its ridiculous.

Here is another sneak peek at a video I shot in the Keys at a place that is as out of place in the Keys as a turd in a punch bowl. But their burgers are OUTRAGEOUS. They make their own sausage and bacon in house as well as all of their condiments with the exception of Mayo. (Hellman's is just too hard to beat!) They have a great selection of craft beers but the burger is the star. Its won best burger in FL a few times and was named by Travel & Leisure as the only place to stop on the drive to Key West. Duck fat fried fries with truffle oil & Rosemary are a nice touch too. Again, there is nothing in the Keys like this so I had to feature it if not for the boldness of the owners alone!

The only way to cook chips (or fries in American) is beef dripping. They taste fantastic but you can only have them once a year otherwise death is on the cards.
 
I disagree. Duck fat to me is far better than beef drippings. First of all, beef drippings has a MUCH lower smoke point which means it will burn (bad) at lower temperatures. To properly cook potatoes to crispness you MUST get oil to temp of 350 F (175 Celsius) otherwise its soggy. Beef drippings will begin to scald at around 270 degrees and no one wants to taste anything cooked in scalded oil.
 
I have to disagree with you on this one. Traditional English fish & chips is always cooked in beef dripping. Every chippy in the UK at one time used beef dripping but these days healthier oils are used. Now for roast potatoes... goose fat!
