There are a lot (ya, that's said a lot, haha) but to name some off the top of my head the ending to Sixth Sense, TOTALLY unexpected twist. Forrest Gump, cuz its sad AND happy.
Cloverfield, because it continues the mystery of whats happening, and shows happier times after such a tragedy. Blazing Saddles, cuz its Blazing Saddles. I'm sure ill add more in future posts....

Definitely agree about Se7en and Shawshank and Manchurian Candidate (original only); [cont.]

I like the Lord of the Rings the Two Towers ending when King Theoden, Aragorn and the others got on the horses and rode out the castle of Rohan then started tearing through the orces and uruk-hais. I thought that was pretty good.

Fight Club (so good of an ending, I had to immediately rewatch it to catch what I missed the first time through)

Seven

The Sixth Sense (M. Night Shamlamanahanahanmxozjeahahshah&%'s only good movie)

The Godfather part 1 had a good ending. How everyone was just getting slaughtered at the end
