Now that you say it, blindness is caused by people who sneeze during orgasm primarly because they don't have enough strength to close their eyes so their eyeballs won't pop out during the sneeze because of the refractory period. That's the only physical explanation I can come up with so far.

It is possible not to close your eyes during the sneeze at two following exceptions:
- visual dysfunction caused by the lack of inner mucus on the eyelids
- altered state of consciousness (where you can't control yourself)

I guess in the second one you would surely loose your eyeballs.
