Wow, looks tasty :drool2: , never thought of adding mushrooms to it.

Scaloppine alla pizzaiola, was one of the first recipies I tried to make, back when I was 14-15, even convinced my Nonno (who was the best cook in the family), and still love to make them and especially eat them :)

Personally I like to make them in the traditional Neapolitan way, with capers added to the tomato sauce. Preferred meat is of course veal escalopes, but a lot of different cuts and meats can be swapped. A great variant I like, is to add some fresh mozzarella cheese sliced, and put it under the broiler for a bit (or alternatively, add the meat to the sauce in the pan, add a few slices of mozzarella and cover with the lid).

I usually use ribeye or flank steak but decided to try something thicker and leaner and it came out great.

here is some bruschette I had in Firenze, Italy at this great place called Antica Trattoria "da Tito" dal 1913 which is still one of my all-time favorite restaurants.

I made a seriously delicious mushroom cream sauce last night for my filet. I went to my favorite butcher who had some 180 day dry aged prime filet mignon they had just started
preparing to sell. I got myself one and then decided to make a mushroom creme sauce to top it for something different. No carbs and really great!

I don't like to grill good meat. You lose all the best stuff when you grill it and a flame is NOT good for meat. I broil my steaks to keep them juicy and in my opinion far better than any flame cooked steak I've ever had.
I put my meat in a large zip lock bag with some sea salt and a pinch of ground cayenne pepper and some black pepper and some olive oil. when the steak is covered with the oily mixture I put it in a shallow dish and broil it with the oven rack just 2 inches below the broiler.
First I make the cream sauce. I put a small carton of heavy cream in a small pot and put on medium heat. While this heats I sautee some portobella mushrooms in olive oil. Make sure NOT to let the cream boil!!! I add a couple of crushed (not sliced!!) garlic cloves, a pinch of pepper and some grated pecorino cheese (creamy sheep's milk Italian cheese) but you can use any type of cheese you like and keep stirring to make sure not to let it boil. Once the mushrooms are nice and brown I put them in as well and reduce the heat to simmer and let it continue to thicken for about 10 minutes while I broil my steak.

Once it's all done just plate your steak and spoon your mushrooms and cream on top! I like a nice wedge salad with it. simple, low carb and awesome!

I know I have said I don't like to grill meat over flame...but I never said I don't like it smoked!

I am having some friends over and we're going to take my boat out to an island for a picnic and party today so I have been making some ribs, leg of lamb and sausages to take with us! We'll make a fire and just heat these up easily and soooooo much better than hot dogs or cold sandiwches don't you think?

I had a little flare up when I opened the lid but it didn't last long. It's been nearly 4 hours and it's almost ready. Everyone is coming in the next 45 minutes to catch the high tide so it'll all be wrapped and in the warm cooler by then! :)

Wish I could come along... those ribs and leg of lamb look absolutely delicious :drool2:

I'll try to get some pics in here, but it's always problematic, as by the time I get the idea to take a picture, the plate is mostly empty :D
 
Hey Mariah !!! There is some really interesting and exotic looking food here...it all looks exquisite ! I feel like I need to go to the gym just looking at all of these delicious dishes lol ! ...I will be sure to catch your show on May 2nd...Take care !

pizza from tonight! i made half ricotta and the other have mozzerella just a simple margharitta pizza
tomato, basil, garlic :) and I made it heart shaped :)

one of my all-time favorites this morning :) poached eggs in marinara sauce.

just put some marinara in a pan and heat it until it starts to bubble. crack 2 eggs in it and add some chopped basil. once the eggs are nicely done to your liking, me I prefer sunny side up poached but not runny! then drop in some mozzarella until it's melted.
I garnish it with a nice piece of goat cheese crustini (toasted bread with goat cheese and olive oil) and a single piece of fried pancetta what's pancetta? bacon right? NO!! Pancetta is the italian version of bacon but it is salt cured pork belly and spiced with nutmeg, fennel and peppercorns whereas bacon is smoked. I prefer pancetta without question

I top it with a slice of avocado and some diced scallions and enjoy!
how fucking good does this look? I'm about to find out!
