can't wait for this week...getting a new motor for my boat put on Monday and Tuesday but wednesday i'm hitting the islands and going to dive for lobster and have a trap filled with blue crab! cooking it all over a fire with coconut rice

of course..filming it all so stay tuned! :)

don't you dare suggest shit like that! lol NEVER. I have a dock in my backyard and I put out a trap with chicken parts and the next morning I have 5 or 6 nice big fat ones! :)


Boat and dinner pics from tonight...gotta say it was a great day!

dinner was filet sliced, asian slaw i made from broccoli and cabbage and carrot. I added some asian 5 spice, red
chili flake, with olive oil and some 7 year aged balsamic. nice and spicy but with that nice asian flavor!
I made also some bucatini noodles with just olive oil and garlic and sauteed some shrimp in the olive oil and garlic.

The only crab I have eaten was snow crab legs. Never went to the body part since I never knew what to do with them. Then I saw on TV a Maryland chef demonstrate the process. I had no idea how simple it was and how much meat was inside. I am now on the hunt to do it on my own.

I saw on your interview about your Mom and her tacos. That reminded me of something that happened a few months back. I was in the mood for tacos and usually have a packet of seasoning mix for the meat. Not there. Since I have about 40 different spices on my rack I decided to look up the mixture and put it together myself. I find a jar of Adobo Con Sazon. It had exactly the same ingredients as the mixture I found on-line and tastes as good as anything I ever bought in the packets. Live and learn.

/\ theres definitely a method to the body meat. if you break em off in sections by pulling off the leg sections of the body off individually, the meat is easy to get too. just dont waste your time with blue crabs. theres hardly any meat on those damn things to begin with.

I get the big blue crabs in the canal behind my house. It takes 7 of them for 2 people. but the meat is so sweet and I make it into a topping for steak. its a lot of work but there is a nice reward when you see someone bite into it with a slice of prime filet and a little home made bernaise with extra lemon :)

now that it's lobster season I've been getting a few and just came up with a fucking delicious lobster roll. I am shooting an episode of it so I'll link you when it's up. I make my own lemon pepper and use a hot dog bun from a local bakery that I grill on both sides.

the only thing thats even worth the time is the roe of blue crabs. that shits good. that is, if they even have em.

i had a couple of those a couple weeks ago or so and i got skunked. it was 1 out of 5.

Tried making burritos yesterday, dont think they were anywhere close to what a proper one should be...

But atleast they were tasty.

Chili and garlic with feta cheese and fresh basil.

Nom nom nom.

My girl was complaining that her mouth was burning... but she´s a true dutchie and cant eat anything spicier than mashed potatoes.

Go ahead and laugh but the first time I had any kind of Mex was in my 30's. Taco Bell. My girlfriend was born in Guatamala and introduced me to the tortillia. They are magical. You can do anything with them and they can stay in the fridge forever. I have not bought a loaf of bread in the past 4 years. Only when I am in the mood for a sloppy Italian parm or big hero will I walk down and grab a fresh roll.

Well, I'm past 30, and I've yet to try proper mex food, I refuse to count the stuff you buy in those sachets and mix yourself since they are generally as spicy as a most towelette.

granted, i have no problem with that, and there's a chance it didnt taste like a shoe, but it is amusing.

My girl and I found this nice little store front Mexican place. Nothing fancy. Just good home style food. Family run place with the old ladies in the kitchen cooking away. One afternoon we go in and my girl usually places our order. She does and turns to me to ask what I want to drink. I look at the waitress and say water. After a short awkward pause my girl says to her agua. Waitress nods, writes it down and off to the kitchen. I am shocked. How can a waitress not know what water is? I don't care how long she has been here. She was a waitress in New Jersey. Is this the first time she has ever heard this word? It wasn't like I was asking her how to rebuild a transmission, I just asked for water.

I love Mexican food...might be my favorite actually. Tacos and Taquitos are my favorite. After living in LA all my life and having been to Mexico about 50 times I have eatent a LOT of tacos and I can honestly say that Taco Bus in Tampa are the best I have ever had. Their Barbacoa is to DIE for. it's literally a school bus gutted and turned into a food truck...now they have an actual restaurant but the food is all cooked in the bus. Awesome place!

Yep, feta, I was a bit suspicious to the outcome when I was making them, but it turned out really nice. I've been raised by mother, who is a chef, to mix things that aren't supposed to always go together, because you never know, it might return out to be a hit. :) It also helps that I have no idea what proper mexican food is. :)

check this out...I bought these really nice thinly sliced porterhouse steaks from my butcher. I would never buy a steak less than
at least an inch thick but he had cut these for someone who never showed up to claim them. So i got them with something special in mind...now mind you these aren't grocery store steaks, these are prime 90 day wet aged steaks. Great marbling and seriously quality meat! So....I laid them flat and put some sea salt and pepper on them and then 3 slices of provolone and some portobella's and wrapped them up. Around each one I wrapped 2 strips of applewood smoked bacon and tied them.

I popped them into the oven 450 for 20 minutes. While they were cooking I made some pancetta in a skillet and then used the drippings to make some more mushrooms and to fry a long hot pepper.

After the mushrooms were done I dried them on a paper towel then tossed them in white truffle oil.

The bacon wrapped porterhouses were done so I pulled them out of the oven them gave them 1 minute on each side in the pepper and mushroom infused pancetta drippings.

to plate this I laid the bacon wrapped porterhouse on the plate, topped it with the fried pepper that I split open and butterflied and the truffle mushrooms and then I garnished the plate with my crumbled pancetta

How great does this look? The cheese was oozing out and it all had a great spice to it with tons of layers of flavor. Seriously one of my least healthy but most delicious creations! :) (I will note that I am on an all-protien diet right now!)
