Wing, Leg, Breast (whitemeat), Neck

I'd start with the neck and spend time with the breast and slowly work my way down...

Wait. I kinda realized this is thread must be about a turkey. :D
The juices are in the dark meat. I always cringe when I snap the wings back when I'm prepping the thing.

How do you cook turkey? Do you have any Chefalicious tips for Thanksgiving turkey? :hatsoff:

I didn't finish culinary school, but I'll offer my favorite.

Deep mutha fuckin fried

A smoked turkey is also very good, but severely time consuming. The last ones we did took about 12 hours of continuous babysitting.

If you are getting DRY Turkey here's a tip, DEEP Fried in peanut oil! MAN you will NEVER EVER have better turkey than that. Just make SURE beyond all doubt that there is no water what so ever and especially no ICE, it will cause the Fryer to EXPLODE!

But the deep fried is how Turkey is done!

Very few foods don't lend themselves to deep frying. If people can deep fry Twinkies and candy bars, ANYthing is fair game. I had some Reese's cups at a fair once. I ate one and had to giv the other to my bro-in-law. It was too rich, but really good.

I wouldn't say it's GOOD for you, but it's definitely "healthier" than vegetable oil or straight up bacon grease. Mmmmmmm, bacon grease.

How about pink?

Pink poultry is raw poultry and raw poultry = salmonella. NO THANKS!!!

Oh...OH...you meant pussy? Yeah, that's ok too, I guess. :dunno:

There is a blue-footed chicken that can't carry salmonella. I still won't eat it, but I have seen it offered at a sushi bar.

As long as it's from a rare bird called "Becks poamr" then I'm game.

:D

I'd like to add - Make sure that your grease is 350º f or else the turkey will actually become a meat / peanut oil sponge.

Do your own tests - "cold grease" makes for very greasy food.

You'll never have dry turkey if you put wine in your sauce ...

Not personally, but I've seen it done a number of times and eaten it afterwards. I don't recall it being that messy, although if the person doesn't know what they are doing then it could be.
