Always have goat Kleftiko when I'm in Sfakia they only eat wild mountain thyme cook for 4/5 hours lovely, plus at home our local butcher aways has fresh venison, mutton and pheasants when they're in season and his pheasants are cheaper than a supermarket chicken! nom...nom

I think we have laws regarding the sale of certain game birds, and meats. Government regulations don't ya know. Never had mutton...but I've had plenty of pheasant...just sucks biting into a piece of shot.

Touch wood - I've never hit any lead yet, and a bit of offal can be awefully nice ;)
 
I already asked what the difference was between Venison and Game... though I got no decisive answer...

Also why is there no goat, lamb, etc.?
 
Not me, I like to feel the pulse after I bite into their Jugular, the essence of life has to be consumed before their heart stops :eek:

In America...or at least some states, mine included, unless it's a shotgun slug for deer, we have to use steel shot, because animals that aren't brought down, end up suffering a slow death from lead poisoning. In fact, very recently there has been some serious concerns over the use of lead, and the effects it has on the animals that feed on other animals. Sadly it included some heartbreaking video of a beautiful American Bald Eagle, that was on the verge of death due to lead poisoning. The gun lobby angers me with this one, claiming it would cause sky rocketing prices, for hunters. Most of my friends hunt, and use steel shot. It took them some practice to get used to steel over lead, but they got it down, and are successful.
 
I think it's just common use in language to say lead, even when it's not used. Because historically lead was most commonly used.

i never eat liver. guts come out easy for a reason, so you can toss em.


honestly, my beef with liver is with farmed animals. livers are the body's filters and i can only imagine a typical farmed american animal's liver status.
