One of the most traditional pizza in Italy is made with tomato sauce,olive oil, oregano and anchovy (no mozzarella as you can notice). This kind of pizza is very simple and is called "Napoli" (=Naples)
The most important things in a pizza are
- dough (a good pizza is thin)
- ingredients quality
- firewood oven for cooking
Vegetarian pizza doesn't necessarily mean traditional pizza, actually there are several ways (rated as traditional) to make a good pizza using not vegetarian ingredients too as ham (raw or cooked), spek, fat (slices), shrimps (with rucola), spicy salami, fresh salsiccia for example (I love a kind pizza with fresh salsiccia, ricotta cheese, mozzarella and tomato :rofl: )
