Well, yeah. You roast it upside down for the first hour, boost the temp to 500 degrees for about twenty minutes to brown the skin a little quicker, then lower the temp back down to 350 to finish. I like to brine a turkey for 2-3 days before roasting, but you almost always have to cook the stuffing separately because it gets too wet.

I'm planning on brining a pork tenderloin and making a molasses based sauce with chestnuts and mashed sweet taters with pecans. Keeping it simple this year.

I been practicing with the brush pen. It's a little more nuanced than using a fountain pen and I'm just learning how the different amounts of pressure applied affect the overall outcome.
