Hey, you ever have balut? I married into a tribe of Flips and that is the one thing I won't eat. I even drank some foamy crap out of an Ox's horn that a bunch of 100 year old topless ladies vomited in. No balut though.
Fried sunny side up, but with the yolk broken. Yes, I'm neurotic.
But if I have the time & I'm feeling classy, I'm go for scrambled dry with a side of condiment (ketchup, or Worcestershire sauce)
One of the best Breakfasts I ever had was in El Paso on the border. Maybe the best Chorizo and Eggs ever. Coffee with it was amazing.
X, have you ever been to Kerbey Lane down in Austin? The original one is a funky old house right in an Austin residential neighborhood. Such a great place. I learned about Migas there. I miss Kerbey Lane but make a point to eat Breakfast there every day when I'm over there. I bet you'd love the place.

I used to go in there and kill some chilaquiles and finish it off with a slice of apple pie then sit and sip coffee for a couple of hours if it wasn't too busy. That was a long-ass time ago, tho, when my buddy was at UT and I'd drive six hours from East Texas to go hang out with him for a few days.

I tried the one on University, but it wasn't as good as the one on Kerby. I haven't kept up with Austin stoners since the last time I went bar crawling on 6th Street. Are you flying in or driving? If you do a lot of driving you've probably stopped in to one of my favorite dining establishments, The Iron Skillet. I hit the ones in Shreveport, Weatherford, and San Antonio on the regular.

We're flying. The last time I drove I got a cracked driver's side mirror and a chipped windshield along with paying for gas. Flying is easier and maybe even cheaper. We'll either rent a car or Uber around. My wife is a wiz with the cellaphone making arrangements. I'm the ape behind carrying the heavy stuff.
