Dear bobjustbob

This is my traditional New Years Day southern soul food meal of collard greens, black eyed peas, barbecued pork chops and Eastern North Carolina style pit cooked barbeque.

You eat this on New Years Day it brings you good luck which translates nicely to your days at the track.

Sure was good.

UPDATE! I went for a second helping.
I got a pork chop this time with a little more fat on it and the fat got a little caramelized just like I like it.

The barbeque sauce is home made and baked on nicely.
Extra helping sure was good!

Glad you are over your flu. I don't know how you had the energy to cook less the desire to eat. Mazel tov. Did you make your own ENC pork or picked it up? That shit would have occupied a good chunk of time while you were sick. BBQ is nothing I can do now. My new place is on the 3rd floor with no deck. I'm not running up and down stairs to cook. Indoor grilling is an adventure since there are smoke detectors everywhere. Even with the range hood running, it's a 50/50 chance one of those fuckers starts screaming "FIRE, FIRE". Those look like good eats and plenty to go. No need to go out today because you have probably got enough... ice in the house.

As you check off stuff and search, it will bring up more suggested items to check off. Totally sortable by meal options. Lunch, dinner, desert, snacks, vegetarian, vegan. Recipes that are short an item or 2 also come up.

It is so convenient to let them make suggestions rather than me. Last night was a chicken casserole with a box of mac & cheese. Dressed it up with bread crumbs and shredded cheddar on top and it was very good. I had never thought to use boxed mac & cheese but it worked.

Today is going to be shit to go on potato skins. The taters are in the oven and that is giving me time to prepare the dressings. supercook.com, check it out.

Black eyed peas, onion, and a Smithfield smoked picnic shoulder. Put it on about 8 o'clock this morning on low, it'll cook till later this afternoon, then cabbage and cornbread.

x, you doin' that in a crock, right? I decided to upgrade to new cookery when I made my move to new digs. I got rid of my old stuff including those cast pieces. My electric stovetop is practically useless but I can regulate temperature in the oven with a thermometer. Thank God I can at least fry on those stupid fucking electric elements. Would love to have a rice cooker, slow cooker, deep fryer all in one. Been searching for so long but nothing has met the mark. I shouldn't have to get 3 different appliances in this day of technology.

I make a turkey casserole out of leftover turkey much the same way as your chicken.

The collard greens, my mother prepared. She did all the taking the leaves off of the stalk, and cooking them in the side meat. I did take them home and finish cooking and drain them. Correct , I bought the barbeque yesterday and I cooked the pork chops in the oven. The blackeyed peas were dry and I had to soak them and cook for a couple of hours. Seasoned with salt and a little bacon grease.

Yeah, I am getting a little better with the flu after about a week.

Couldn't have done this if I weren't.

Thought I'd update. This is leftovers from yesterday. I had to replace the cabbage with backup collard greens, all my cabbage got scarfed. I didn't get a chance to snap a photo last night, the wife gets pissy when I take food photos and hold up dinner.

This was today's meal. Leftover pork chops from yesterday pan fried this time.

I had some leftover mashed potatoes from Christmas, that I added flour, onion powder, egg, salt and pepper and fried them up and made potato pancakes.

Sure was good.

You guys made me go to the market today. First stop was the Kosher restaurant. I brought in a bag and was negotiating over matzo meal. It was like buying opium. I was willing to pay for the good shit and a good count. Got some roast beef and natural casing dogs just to make him remember me. Matzo balls are so easy to make. Egg, oil, water, salt, matzo meal. You want to step it up? Substitute chicken broth for water, substitute chicken fat for the oil. BANG. Your foreskin will fall off.

The beans I bought were canned. My dear departed could make beans like I will never have again. I've tried everything to reproduce them but can't get it the same. Funny thing, her cooking was marvelous but she HATED to cook. I had to bribe her. You cook this today and I'll do the cooking for the next 4 days.. and take her to Atlantic City.

I had started another thread about canned goods. Interesting results. Vienna sausage seems popular yet other canned meat is not. Spam is not something I need in my pantry but maybe it should be. Tuna will always be there but canned chicken is like... just have real chicken. Go have scorpions on a stick with dipping sauce for all I care. It's not my mouth. We all need to eat so enjoy our food.

I make it in a cast iron skillet. It'll probably be a while before I make another pan but when I do I'll take some more pics. On a side note, I sat here and chuckled for a good sixty seconds over that, "it'll make your foreskin fall off" comment. :1orglaugh
