If you ever get to eastern Pennsylvania...some of the "unique" cuisine you need to try includes Lebanon Bologna (smoked beef sausage type bologna...usually eaten as a sandwich meat), Shoofly Pie (a fluffy pie made of molasses), and Scrapple (loaf made of pork scraps and other ingredients). Those are just some of the oddities they have in that area!

I live in Louisiana now....some of the things down here include: Gumbo, Jambalaya, shrimp creole, and Étouffée! Most all of this stuff is...of course...VERY BAD for you! Ha ha ha!
