I came across this channel which does upscaled openings from classic TV shows. There's a good mix of traditional animation and CG stuff. It's done by AI (not manually upscaled) so it can look different from regular HD upscales, but I imagine it takes a fraction of the time & cost, so it's interesting what the tech can do.
