The secret ingredient? MY BALLS
Chef Homaru Cantu is one of my inspirations. For those of you who don't know who he is, he is a pure genius. He has taken the culinary world by storm and is paving the way for future restaurants. Chef Cantu is brilliant when it comes to molecular gastronomy (the science of altering a food's physical and/or chemical state). Chef Cantu doesn't use your "conventional" methods of cooking to do this either. He applies various elements of science to his creations and uses extremely high-tech tools/machines in his kitchen. Let's just say that he uses lasers that are designed by NASA to cook some of his food. I could go on and on forever about how insanely brilliant he is, but I will just say that Chef Homaru Cantu has said that he wants to make food LEVITATE IN FRONT OF HIS CUSTOMERS. Yes, you read that correctly.

Anyway, here is a video clip of him talking about his restaurant, Moto, and he demonstrates some of the cool things he does with the food. The thing he does with the **** glasses is the coolest thing I have ever seen!!!

FYI - When he says "You actually eat the menu", he literally means that you eat your menu. He makes flavored, edible, soy based menus, which are designed to be eating as an amuse bouche (a tiny, single bite sized "course", which is eaten before the appetizer).

Assisting Mr. Cantu with what he calls his '''Star Wars' stuff'' is DeepLabs, a small Chicago product-development and design consultancy. Mr. Cantu meets weekly with the crew of aerospace and mechanical engineers, programmers and product designers at DeepLabs for brainstorming sessions.
''I tell them I want to make food float, I want to make it disappear, I want to make it reappear, I want to make the utensils edible, I want to make the plates, the table, the chairs edible,'' Mr. Cantu said, ''I ask them, what do I need to do that?''
