not really into country, but Johnny Cash is the man.

southern rock... Lynyrd Skynyrd - Free Bird

Yeah, I hear ya. Country is kinda irritating, but Southern Rock is very delightful. In that genre of music, Skynyrd reigns supreme. My favorite songs are:

Free Bird(no brainer)
Simple Man
The Ballad of Curtis Leow(Don't hear this enough)

Swamp Music, and the Needle and the Spoon

i love the bit in needle and the spoon where Ronnie's singing 'i know, i know, i know...' and it kinda fades out and turns into the guitar solo. cool as fuck.

He Stoped Lovin Her Today...George Jones

Graveyard train by CCR and of course freebird by lynyrd skynyrd

Simple Man has always been one of my favorites, that and Free Bird. Both great songs.

Jason Isbell - Decoration Day

Originally recorded when Jason was in the band Drive-By Truckers, this is a killer version by his current band, the 400 Unit.

Johnny Cash - A boy named Sue
Willie Nelson - You were always on my mind
Alabama - Roll On
Steve Earl - Cooperhead road
CCR - I put a spell on you
Neil Young - Harvest moon

The whole Skynyrd 'Pronounced...' album is an American masterpiece. Had to be one of the most critical, classic albums ever. I only have it on vinyl collecting dust in my garage. :( Maybe my cousin burned me some of their stuff, I'll have to look around.
