What exactly does the tossing of the dough do for a pizza crust ?
I do know that hand tossed pizzas are the best pies that I've ever had ! :yummie
The only thing that I can think of at the moment as to why pizza dough is spun and tossed is that the centrifugal ****** spin the dough outward making it a desired size e.g. 8 '', 10'' etc.
The other thing is that the centrifugal ****** also feather the dough e.g, thinner in the center and thicker toward the outside. :dunno: just a guess
